罗望子果肉的营养成分分析

摘要: 本文系统地测定了罗望子荚果果肉的营养成分,结果表明:罗望子果肉含还原糖33.33%,占总糖量的96%以上;有机酸13.86%;粗蛋白6.79%;十八种氨基酸5.75%,其中八种人体必需氨基酸含量占氨基酸总量的30.43%;此外,还富含钾、钙、磷、镁等多种矿质元素和维生素。罗望子是一种营养价值颇高,且兼具医疗保健功能的野生植物资源,具有很高的综合加工价值。

Abstract: The Nutrient Composition of the Tamarind pulp was systematically analysed and the following results were obtained.The pulp contained 33.33% of reducing sugar;accounting for 90% of the total sugar;13.86% of ovganicacids, 8.79% of crude proteins and 5.75% of 18 aminoacids, Eight essential amino acids for the human took up 30.43% of the total amino acids.The flesh was also rich in minerals such as, k, ca, p, Mg.and Vitamins.It revealed that the fruit is a Very useful wild plant resource with quite high nutrical Values and also with medical and health protection functions.It showed high processing values.
