大恒优质肉鸡不同品系肉质风味物质比较分析

Analyzing the Content of Flavoring Materials in Different Strains of Daheng High-quality Broilers

摘要: 采用大恒家禽育种公司培养的第八世代优质肉鸡为材料(7个品系,每个品系公母各10只),测定其90日龄时的胸肌肌苷酸和鲜味氨基酸含量并进行分析。结果表明:①肌苷酸含量在品系间存在差异,其中D99品系的含量最高;除了S03与S06×S07、S05与S01、S05与S06×S01、S07与S06×S01之间差异不显著,其他各品系两两间均达到差异显著水平;②谷氨酸、甘氨酸、天冬氨酸、丙氨酸和精氨酸含量在各品系间存在差异,其中杂交品系S06×S07的5种鲜味氨基酸含量均最高;③性别对肌苷酸和5种鲜味氨基酸的含量有显著影响。大部分品系不同性别间肌苷酸和鲜味氨基酸含量达到差异显著水平。

Abstract: The high-quality broilers of eighth generation in Daheng Poultry breeding company were collected, which included 7 strains and each strain of the 10 males and females, the content of IMP and delicious amino acids in chest muscle were determined and analyzed when they 90 days old.The results indicated that:① there were different IMP content among strains, and the highest content is strain D99;IMP content between strains were significantly different(P<0.05), except between S03 and S06×S07, S05 and S01, S05 and S06×S01, S07 and S06×S01.② The content of glutamic acid, glycine, aspartic acid, alanine and arginine showed differences among these strains.The hybrid strain S06×S07 showed the highest content of the five delicious amino acids.③ The content of IMP and the five delicious amino acids were significantly affected by sex and reached significantly different levels among most strains.
