不同饲养条件下黑水色湾藏猪肉质差异性研究

Study on the Differences of Heishui Sewan Tibetan Pig Meat Quality under Different Feeding Conditions

摘要: 【目的】为了探明不同饲养方式下黑水色湾藏猪肉质差异性。【方法】选取放牧、半舍饲、舍饲饲养12个月的黑水色湾藏猪30头进行屠宰取样,检测各类营养指标和安全性指标,并进行统计分析。【结果】3种养殖模式猪肉样品中均检出了18种氨基酸,且谷氨酸含量最高;总氨基酸和必需氨基酸含量均为舍饲组>半舍饲组>放牧组;除组氨酸和胱氨酸外,舍饲组各氨基酸含量均显著高于放牧组(P<0.01);舍饲组各氨基酸含量也高于半舍饲组,其中蛋氨酸、酪氨酸和色氨酸差异极显著(P<0.01);3组肉样EAA/TAA值略低于40%,EAA/NEAA值也在60%左右,蛋白质组成较为理想;舍饲组氨基酸评分结果最好,除含硫氨基酸评分为60.57外,其余各必需氨基酸得分均高于100;3组肉样水分、蛋白质、维生素E 3个指标均表现为舍饲组>半舍饲组>放牧组,舍饲组胆固醇平均含量为29.79 mg/100 g,均显著低于半舍饲组和放牧组(P<0.01);3组肉样中均未检出8种农兽药残留,未检出金黄色葡萄球菌和致泻大肠埃希氏菌两种有害菌。【结论】舍饲养殖的黑水色湾藏香猪肉营养价值优于半舍饲养殖和放牧养殖,该养殖模式值得大力推广。

Abstract: 【Objective】 In order to explore the meat quality status of heishui sewan Tibetan pig meat under different feeding conditions. 【Method】 We selected 30 Sewan Tibetan pig which were feeded for 12 months in grazing, semi-forage and stall-feeding, then all the pigs were slaughtered. Muscle samples were collected to detect nutrition and safety indexes. 【Result】 Eighteen kinds of amino acids were detected in the samples of the three breeding models, and glutamic acid content was the highest. The content of TAA and EAA showed the trend of stall-feeding group>semi-forage group>herding group. Except histidine and cystine, the amino acid content in the stall-feeding group was significantly higher than grazing group (P<0.01). The content of amino acids in stall-feeding group was also higher than that in semi-forage group, in which methionine, tyrosine and tryptophan were significantly different (P<0.01). The EAA/TA values of the three groups of meat samples were slightly lower than 40%, and the EAA/NEAA values were also around 60%, indicating that the protein composition was ideal; Except for the sulfur-containing amino acid score was 60.57, the scores of other essential amino acids were all higher than 100. The content of water, protein and vitamin E all showed the rule of stall-feeding group>semi-forage group>herding group, and the average cholesterol content in the stall-feeding group was 29.79 mg/100 g, which was significantly lower than that in the semi-forage group and the herding group (P<0.01). None of the three groups of meat were found to contain 8 kinds of pesticide and veterinary drug residues, no traces of aureus and E. catharsis were detected in all the meat samples. 【Conclusion】 The nutritional value of stall-feeding in Heishui sewan Tibetan pork is better than that of semi-forage and grazing, which is worthy of promotion.
