大豆分离蛋白膜结构与配方优化研究

Study on Characterizes and Formula a Soybean Protein Isolate Film

摘要: 【目的】为研究复合膜配方对性能的影响。【方法】以大豆分离蛋白、甘油、乙醇为原料,设置不同梯度制备复合包装膜,通过对3个因素分别进行试验,研究膜配方对复合膜光学和力学性能的影响。【结果】大豆分离蛋白含量6 g,甘油4 g,乙醇3 mL时,制备出的薄膜与光学性能优良,色差为9.71±0.76,透明度(85±0.61)%,光泽度为33.31±0.61,薄膜的拉伸强度为5.80 MPa,断裂伸长率为35.63%。【结论】甘油、乙醇与大豆分离蛋白具有良好的融合性,能显著提高复合膜的机械性能和光学性能。

Abstract: 【Objective】 To study the effect of compound membrane formulation on properties. 【Method】 The composite packaging film was synthesized by soybean protein isolate, glycerin and ethanol as raw material with different gradients. The effect of formulation on optical and mechanical properties of composite film was studies through experiment with three factors. 【Result】 When the content of soybean protein isolate is 6 g,glycerin 4 g,and ethanol 3 mL,the composite film has excellent optical properties, chromatic aberration of (9.71±0.76),and transparency of (85±0.61)%,gloss of (33.31±0.61). The tensile strength of film is 5.80 MPa,and elongation at break is 35.63%. 【Conclusion】 Glycerin,ethanol and soy protein isolate have good fusion properties,the mechanical and optical properties of the composite membrane were improved significantly.
