单色光对大恒肉鸡屠宰性能、肉质性能及肌肉中氨基酸含量的影响

摘要: 【目的】测定不同单色光下,雄性大恒肉鸡的体重增长变化、屠宰性能、肉质指标以及鸡肉中所含的各种氨基酸含量。【方法】同一批次0日龄雄性大恒肉鸡360只,随机分为4个处理组,每组包含6个重复组,每个重复组15只鸡。试验组包括红光组(660 nm)、绿光组(540 nm)、和蓝光组(480 nm),白光组(400~760 nm)作为对照组,自由采食和饮水。【结果】体重增长结果显示在0~70各阶段日龄中,每次称重均是红光组最重,增重速度最快;屠宰试验结果显示红光组活体重及采食量为所有组中最高,但其半净膛率却是实验组中最低的;此外红光组的脂肪和肌苷酸含量均要显著高于其他试验组(P<0.05),但各组之间氨基酸含量差异不大。【结论】红色光照对鸡增重和生长速度有提升作用,同时对于鸡肉肉质的口感风味也有一定的帮助。

Abstract: 【Objective】 The aim of this study was to investigate the effects of monochromatic light on slaughter performance, meat quality and amino acid contents in the muscle of Daheng broiler chickens. 【Method】 The same batch of new born male Daheng broiler chickens were randomly divided into 4 groups (6 replicates, 15 observations). The experimental groups were exposed to red light (660 nm), green light (540 nm) and blue light (480 nm), respectively, while white light (400~760 nm) was used as control. All the chickens were given ad libitum access to feed and water. 【Result】 The results of weight gain showed that the weight and growth rate were the highest and the fastest in the red light group at all stages from 0 to 70 days of age; the results of slaughter test showed that the live weight and feed intake of red light group were the highest among all groups, but the semi eviscerated percentage was the lowest among test groups. In addition, the fat and inosinic acid contents of red light group were significantly higher than those of the test groups (P<0.05), but there was no significant difference in amino acid content among all the groups. 【Conclusion】 Red light enhanced growth performance as well as the meat quality of chickens.
