重新认识大麦的食用价值

摘要: 本文根据国内外最新研究成果,论述了大麦的β-葡聚糖、生育三烯醇、碳水化合物和类脂、蛋白质和氨基酸以及可溶性食物纤维等成份的营养和保健价值,认为大麦食用价值高,发展前景远大。提出开发我国食用大麦和改进食用方法新途径,并对裸大麦食品糌粑、珠珠麦和大麦片的加工制造提出改进意见。

Abstract: The nutritional and healthful dietary value of the β-glucans.tocotrienol, carbohydrats, lipids, protein and amino acids and goluble dietary fiber of barley were described and discussed with refference to the newly published researches from home and abroad.It should be taken into consideration that barley possesses the high dietary value and there is hopeful outlook in developing this crop in China for its plenty of food barley resources.The way to developing food barley and means to improve barley diets were suggested.and an idea is proposed for improving the hulless barley food, such as zamba, pearled barley and groats.
