香菇营养成分相互关系的探讨

摘要: 本文通过对17个香菇品种营养成份的分析,结果表明:不同品种间的营养成份和氨基酸种类无明显差异。氨基酸种类中以谷氨酸含量最高,异亮氯酸、天门冬酸和亮氨酸次之,而以胱氨酸最低。和脂肪含量与可溶性总糖、粗蛋白和粗纤维均无相关性,但可溶性总糖与粗蛋白和粗纤维均为显著负相关,而粗蛋白与氨基酸含量却为极显著正相关。

Abstract: The results of statistical analysis of nutriment components in seventeen sorts of Lentinus edodes showed that different varieties had no evident effects on the nutriment components and the composition of amino acids, Glutamic acid was the most abundent in the sorts of amino with the quantities of isoleusine. Aspartic acid. Leucine Sequently getting less and cysteine was the lowest. There was no corelation between the quantity of gross lipids and that of solutable sugar, gross protein and celluloses. But total solutable sugar was evident negative corelated to gross protein and celluloses. Gross protein was extremely evident positive corelated to the quantity of amino.
