四川泸州黄羽山地乌骨鸡群体的肉用性能分析

The Analysis of Meat Production Performance on Luzhou Yellow-feather Mountainous Chicken

摘要: 摘要:【目的】试验对一个四川黄羽山地乌骨鸡群体与青脚麻(BH01系、父系)进行了屠宰性能及肌肉品质比较,为黄羽山地乌骨鸡的保种或选育提供基础信息。【方法】黄羽乌骨鸡及青脚麻鸡1日龄雏鸡各300羽,拍摄黄羽乌骨鸡150日龄典型个体,记录其外貌特征;随机选择150日龄黄羽山地乌骨鸡,75日龄青脚麻公、母鸡各15 羽进行屠宰性能测定;采用水解法测定胸肌内氨基酸以及索氏抽提法测定胸肌肌内脂肪含量。【结果】屠宰性能测定结果表明:青脚麻公鸡的屠宰率显著低于黄羽乌骨鸡(P < 0.05);黄羽乌骨鸡与青脚麻的半净膛率、全净膛率均无显著差异(P > 0.05);黄羽乌骨鸡的皮脂厚显著低于青脚麻鸡(P < 0.05); 黄羽乌骨鸡公鸡的腿肌率以及母鸡的胸肌率均显著高于青脚麻公鸡(P < 0.05)。肌肉品质测定结果表明:黄羽山地乌骨鸡公鸡肌肉的红度值a显著高于青脚麻公鸡(P < 0.05);黄羽乌骨鸡的肌内脂肪含量、肌肉内必需氨基酸(Thr、Met、Ile、Leu、Phe)及鲜味氨基酸(Glu、Asp、Arg、Gly)含量均显著高于青脚麻鸡(P < 0.05)。【结论】本研究表明,黄羽乌骨鸡的肌肉品质优于青脚麻鸡,黄羽乌骨鸡公、母鸡的屠体性状分别优于青脚麻公、母鸡。本研究为进一步研究四川黄羽山地乌骨鸡提供了基础数据。

Abstract: Abstract: 【Objective】In order to provide basic information for breeds conservation and breeding on Sichuan Yellow-feather mountainous chickens, the slaughterperformance and muscle quality were compared between Sichuan Yellow-feather mountainous chickens and Dot-feather and green shank chickens (BH01, paternal line) which was widespread in Sichuan. 【Methods】Each of 300 one day old age of Yellow-feather mountainous chickens and Dot-feather and green shank chickens were adopted. The Yellow-feather mountainous chickens at the age of 150 day with typical appearance were taken photos. Each of 15 cocks and hens of 150 day old Yellow-feather mountainous chickens and 75 day old Dot-feather and green shank chickens (BH01, paternal line) were randomly selected to determine their slaughter performance. The content of amino acids in muscle was determined by hydrolysis method. Meanwhile, the intramuscular fat of pectoral muscles was determined via Soxhlet extraction method. 【Results】The results of slaughter performance indicated that the slaughter rate of cocks of Dot-feather and green shank chickens was significantly lower than that of Yellow-feather mountainous chickens(P < 0.05); The half-eviscerated rate and eviscerated rate between two groups had no significant difference (P > 0.05); The thickness of subcutaneous fat of Yellow-feather mountainous chickens was significantly lower than that of Dot-feather green feet chickens (P < 0.05); The chest muscle rates of cocks of Dot-feather and green shank chickens was significantly lower than that of hens of Yellow-feather mountainous chickens (P < 0.05); The leg muscle rates of cocks of Yellow-feather mountainous chickens was significantly higher than that of cocks of Dot-feather green shank chickens (P < 0.05). The results of muscle quality showed that the redness values a of male Yellow-feather mountainous chickens was significantly higher than that of Dot-feather and green shank chickens (P < 0.05), and the content of intramuscular fat, the essential amino acids (Thr, Met, Ile, Leu, and Phe) and the delicious amino acids (Glu, Asp, Arg and Gly) in muscle of Yellow-feather mountainous chickens were significantly higher than that of Dot-feather the green shank chickens (P < 0.05). 【Conclusion】Generally, the results indicated the muscle quality of Yellow-feather mountainous chickens was better than Dot-feather and green shank chickens, the carcass traits of male and female Yellow-feather mountainous chickens was better than that of Dot-feather and green shank chickens, respectively. We provided a basic data for further study on the Sichuan yellow-feather mountainous chickens.
