低海拔饲养条件下藏鸡屠宰性能及肉品质分析

Study on Slaughter Performance and Meat Quality of Tibetan Chicken Raising in Low-altitude Environment

摘要: 【目的】为藏鸡选育提供参考数据,【方法】取300日龄藏鸡公、母各15羽进行体尺、屠宰性能、肌肉品质测定。【结果】公鸡体尺指标高于母鸡(P < 0.05),公、母屠宰率分别为90.26%和90.24%,全净膛率为60.16%和59.84%,半净膛率为79.20%和79.07%,腹脂率为1.69%和4.57%,胸肌率为13.03%和14.15%,腿肌率为31.19%和23.60%,公鸡腿肌率显著高于母鸡(P<0.05),体斜长与全、半净膛重之间,胸深与胸、腿肌重之间存在显著正相关(P < 0.01)。肌肉中氨基酸总量分别为77.73%和77.34%。其中,母鸡胸肌中氨基酸Val、Met、Leu、His、Asp、Ala以及鲜味氨基酸Val、Met、Leu、Asp、Ala高于腿肌,公鸡胸肌中His优于腿肌(P<0.05)。公母鸡粗蛋白含量分别为32.63g/100g和30.43g/100g;公、母鸡水分含量为74.25%和73.52%,母鸡腿肌显著高于胸肌(P<0.05);公母鸡粗脂肪含量为6.29%和5.44%,公、母鸡均为腿肌优于胸肌(P<0.05);肌苷酸含量分别为0.67mg/g和 0.80mg/g。【结论】体斜长和胸深可作为间接选择藏鸡屠宰性状的选育指标,其腿肌率较高,鲜味氨基酸比例大,必需氨基酸含量高,公鸡屠宰性能总体上优于母鸡。藏鸡具有很好的开发和利用前景。

Abstract: 【Objective】In order to provide reference data for breeding of Tibetan Chicken.【Methods】Each of 15 birds for each gender were sacrificed to measure body size , carcass traits and muscle quality at 300 days of age.【Results】The males’ body size index was significantly higher than that of the females (P < 0.05); males and females had 90.26% and 90.24% of carcass , 60.16% and 59.84% of eviscerated carcass rate, 79.20% and 79.07% of half eviscerated carcass rate, 13.03% and 14.15% of breast muscle rate, 31.19% and 23.60% of leg muscle rate, respectively. Males’ leg muscle rate was significantly higher than that of females (P < 0.05). There were positive correlations between the body length and full or half eviscerated carcass weight, respectively (P < 0.01). Breast depth was positively correlated with muscle weights of chest and leg, respectively (P < 0.01). The total amounts of amino acid in the male and female muscle were 77.73% and 77.34%, respectively; the contents of essential amino acids in breast (Val, Met, Leu, His, Asp, and Ala) and flavor amino acids (Val, Met, Leu, Asp, and Ala) were better than those of leg muscle in females. As for males, the content of His in breast was better than leg (P<0.05); the crude proteins for breast and leg muscle were 32.63g/100g and 30.43g/100g, respectively; and their moisture contents were 74.25% and 73.52% and crude fat contents were 6.29% and 5.44%, respectively; their inosine acid contents were 0.67mg/g and 0.80mg/g, respectively. For the single sex, crude fat content of leg muscle was better than pectoral major muscle (P<0.05). 【Conclusion】Body length and chest depth can be used as indirect indicators of the individual selection of excellent slaughter traits . The Tibetan chicken had high leg muscle yield, and its essential amino acids proportion and delicious amino acid were rich. The slaughter performance of male was better than females. Generally, Tibetan chicken has a good prospect of exploitation and utilization prospects.
